Ingredients
- 8 ounces of quick-cooking noodles such as ramen or soba
- 2 tablespoons vegetable oil
- 1 small onion thinly sliced
- 2 cloves garlic minced
- 1 bell pepper sliced
- 1 carrot sliced
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Green onions and cilantro for garnish
Instructions
- Heat the skillet: Place the cast iron skillet on the wood stove and let it preheat for a few minutes until it reaches a medium-high temperature.
- Sauté onion and garlic: Stir them occasionally as they cook. They should soften, usually takes around 5-7 minutes.
- Sear minced meat: Add minced meat to and sear the protein until it is cooked through or reaches your desired level of doneness. Remove the protein from the skillet and set it aside.
- Meanwhile cook the noodles according to the package instructions. Then add the pre-cooked noodles to the skillet, tossing them well. Allow the noodles to absorb the flavors.
- Then add shredded carrots: Stir frequently, until shredded carrots have softened.
- The sauce: Pour the stir-fry sauce over the noodles and toss gently to coat everything evenly. Adjust the seasoning according to your taste.
- Add eggs (optional): Gently create two small indentations in the noodles using a spoon. These wells will hold the eggs. Carefully crack 2 eggs on the noodles. Place a lid or cover on the pot. The heat from the noodles will start to cook the eggs gently. This technique will create a silky texture with slightly runny yolks.
- Serve: Once the ingredients are heated through and well mixed, remove the skillet from the wood stove. After that garnish the dish with green onions, cilantro, or sesame seeds before serving hot.
