Easy Creamy Vegetable Bake

Ingredients
  

  • 1 pack frozen vegetable mix broccoli,cauliflower,carrots
  • 3 eggs lightly beaten
  • 1 cup cottage cheese
  • 1/4 cup red pesto
  • 2/3 cup milk
  • 2 tbsp olive oil
  • 1/2 cup almond flour
  • 1/2 cup grated 3 cheese mix
  • 2 garlic cloves
  • salt + pepper to taste

Instructions
 

  • Preheat Your Oven: Set it to 375°F (190°C) and grease a baking dish.
  • Put the vegetables in a saucepan,Add salted water to cover the vegetables,Bring the water to a boil
  • Reduce heat and simmer until the vegetables are tender
  • Make the Creamy Sauce: In a bowl, mix the cottage cheese, red pesto, garlic powder, salt, and pepper. Stir until well combined.
  • Assemble: Pour the creamy sauce over the vegetables, ensuring they are evenly coated.  and top with the shredded chees.
  • Place the dish in the oven and bake for 35-30 minutes, until the vegetables are tender and the top is golden brown.
  • Garnish & Serve: Sprinkle with fresh herbs before serving. This bake is perfect on its own or as a side dish to grilled chicken or fish.
